Entrees with rice? - Hippymom

I need some recipe's please???

Last night I was talking to my mom.. and she had came to some realizations about her health

She didn't know things were as bad as they were.. her mind just wouldn't let it.... She just didn't want to hear my concerns for,.. well.. since forever.

She is now allowing me to cook dinners with rice

(and she hates rice) Which is really good for her kindney disease. It has to be white rice only though... any other kind is not good for her.

So I am asking for some recipe's from all you ladies. I only know a couple.. I used to know more.. but since I wasn't allowed to cook rice.. I took the rice recipe cards out of my brain.

Any recipes to make white rice yummy would be great

.. oh.. and low sodium

My SIL makes this amazing Cambodian fried rice dish where she puts in canned carrots and peas and tiny pieces of pineapple and either chicken or smoked sausage. It's amazing... Not sure if she puts any seasoning in it though. She serves it at all her kids' birthday parties, along with Cambodian chicken wings and ribs.

I'll have to look for my recipie,

but you can make burboun chicken and put it over white rice. The sauce covers up the rice taste nicely.

And our favorite is baked/grilled chicken tenders or boneless skinless breasts cut up and put on a bed of white rice, with homemade chicken gravy over top. The gravy is really simple - just chicken bullion, seasonings & cornstarch to thicken it up.

I love risotto!

This is my favorite:

melt some unsalted butter in a large deep pan, add rice (don't know how many people you'd be cooking for

), let it become translucent, add a little (low sodium, or no sodium) broth, stir, once the liquid is just about gone, add a little more, continue. At some point in the process, when the rice is almost done, add some mushrooms (I like mixed ones in a jar

), continue with broth/stir. Once the rice is all done, I add fresh parsley and some freshly grated parmesan

You can season the way you like. I usually put in lots of fresh ground black pepper, and some mixed Italian herbs, and add a little cream and butter to it a couple minutes before serving.

This is a really yummy, creamy dish!

Hey Pet - is there anything you can put in besides mushrooms? I don't like them

Maybe chicken pieces?

and you can also make yellow rice - put chicken bullion in the water until it's strong, then cook rice. The rice will taste chicken-y and be yellow which is nice for a change of color.
