I am a vegetarian

I am a vegetarian and I often read that I should eat more pulses and beans, but I am never sure what to do with them, how to get them to taste nice and how much to eat.

You can do a lot with beans. I make burgers, sausages, soups, loafs, dips, chili... There's so much to be done with beans.

I keep lentils on hand for quick meals because I don't have to soak them and they cook fast. They're great with rice, in lentil loafs, lentil soup, with quinoa, et cetera.

Chickpeas go great in veggie soup, seasoned however you'd like and roasted for a nice crispy snack (I prefer doing it with cajun seasoning), in salads, slightly mashed in a mock chicken or tuna salad, and of course hummus.

We eat a lot of black beans plain with rice, but I also use them to made burgers, and breakfast sausage.

Then of course you can go crazy with the beans and make 15 Bean Soup.

Experiment a little.

I love using chickpeas in Moroccan tagines - sautee em in a little onion add spices and a squeeze of lemon - simple and delicious over couscous lentils make great shepherd's pie, cook with carrots, onions, etc & top w/ mashed potatoes... kidney beans I like to marinate w/ red onion & balsamic to put on salads. I cook pinto beans with rice for tacos.... beans are very versatile, it's all about seasoning and what you eat them with. have fun!

to what everyone said. Beans are super yummy and versatile. The only idea I could offer that hasn't been said already is a mock tuna salad made with chickpeas. Mash up the chickpeas, add in mayo, mustard, celery, onion, s and P, basically whatever you'd mix in with tuna. It's my favorite thing to eat especially when it gets hot outside.
