![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() | Rice with Goodies (entree with meat, but has vegetarian option) I found this recipe on AllRecipes, and I have this vision of the woman who created it digging through her fridge and freezer after a holiday and finding small amounts of a lot of things, but not enough of anything. Anyway, it's delicious and different and makes a ton. Rice with Goodies INGREDIENTS 3 cups cooked rice (brown or white) 3 slices bacon (I use veggie bacon or just skip it) 1/2 onion, chopped 2 stalks celery, diced 1 carrot, chopped 1/2 cup peas 1 cup fresh mushrooms, sliced (I don't think canned would work, but I've skipped these before when I didn't have any on hand) 1/2 cup slivered almonds (you can skip this if you're out - and I used peanuts once and it worked) 1/2 cup raisins (I use dried cranberries instead) 1 Granny Smith apple - peeled, cored and diced 1 cup cooked, chopped turkey meat (I use the LightLife "chick'n," or homemade seitan) 1 teaspoon chicken soup base (I crumble up part of a veggie boullion cube) 3 tablespoons soy sauce 1/2 cup chopped parsley ground black pepper to taste DIRECTIONS 1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. (If you skip the bacon or use veggie bacon, add a little olive oil.) 2. Mix the onion, celery, carrot, peas, mushrooms, almonds, raisins and apple into the skillet. Slowly cook and stir over medium heat until tender. 3. Mix in the turkey, chicken soup base, soy sauce, parsley and pepper. Mix in the rice. Serve hot.
